July 1, 2020, Stratford, CT: What is a Panutza, you may ask? It starts with the dough as does Stratford, Connecticut’s newest pizzeria, ZA Pizza. Created by life-long friends and now business partners, ZA Pizza is rooted in pizzaiola pedigree and created for how people are eating today - fresh, from scratch, and on-the-go.
 
Partner Julio Duque started in the pizza biz at an early age in the kitchen of Rosie’s Pizza in Stratford and Rosie’s II in Oxford, before creating his own restaurant, Julio's Wood Fired Pizza in Southbury. After years of mastering the art of pizza making and his famous thin crust, Julio retired from the restaurant businesses. Or, so he thought.  Presented with the opportunity to join brothers Michael and Mark Cerreta, owners of the building at 1345 Barnum Avenue in Stratford, Julio joined his friends to build a modern take-out/delivery pizzeria where he now recreates his famous pies. ZA Pizza originally opened in February 2020 but closed shop shortly after being interrupted by the COVID pandemic. Julio, Michael, and Mark are thrilled to be back! 
 
The ZA begins with a non-GMO King Arthur Flour, 2-day fermentation dough baked in a brick deck oven, producing a light, crisp, thin-crust pizza. Imported San Marzano tomatoes, whole milk mozzarella, and fresh produce and toppings are the blueprint for ZA’a mouthwatering pizza. Build your own, or enjoy a house special ZA (12” and 16”) such as; shrimp scampi with Gulf shrimp, mozzarella, garlic, and lemon; “buff chick” with roasted chicken, mozzarella, gorgonzola, hot sauce, and celery bits; or the oh-so-popular hot oil pie.   
  
 
Utilizing that same dough recipe, ZA Pizza features Panutzas, Julio’s take on a classic grinder. Freshly baked bread is overstuffed with chicken parm, sausage, and peppers, ZA meatballs, buff chick, or roasted veg, all topped with melty mozz. Classic calzones are stuffed with ricotta, mozzarella and romano cheese and can be filled with meat or roasted vegetables.  Appetizer options include garlic knots, fried mozz, and the already popular ZA wings with garlic and rosemary. Fresh salads, such as a classic Caesar with romaine lettuce, croutons, romano cheese, and anchovy dressing or the organic arugula with granny smith apples, cranberries, gorgonzola, and balsamic dressing round out the menu.
